Mission Deli: Crepes Recipe.

If you're looking for ways to fill your Mission Deli wraps, then look no further because these crepes not only look amazing, but they taste amazing too!

Ingredients
25 g butter
Vegetable oil
1 small white onion, finely sliced
250 g baby spinach
1 teaspoon fresh lime juice
75 g double cream
Salt and freshly ground black pepper
2 Mission Original Deli Wraps
50 g ricotta cheese, crumbled
25 g medium cheddar cheese, grated

Method
Preheat the oven to 170C (325F).

Melt the butter with a little oil in a heavy saucepan over a low heat, add the onion to soften for about 8-10 minutes, then add the spinach. Cover and cook for 2 to 3 minutes. Stir in the lime juice and double cream, season with salt and pepper.

Gently warm both sides of the deli wraps in a dry frying pan. Place them on a work surface. Arrange two thirds of the spinach mixture on one half of the deli wraps, scatter the ricotta cheese on top and fold them in half, place the last third of the mixture on one half of the folded wraps and fold again into a triangle.

Scatter the grated cheese over the crêpes, place them on a baking tray and reheat for a couple of minutes in a preheated oven until the cheese has melted.

Serve immediately.
